Ingredients:

  • 1 kg chicken, chopped
  • 1 onion
  • 1 tablespoon Mazola ghee
  • 1 teaspoon cardamom
  • Cinnamon stick
  • Bay leaf
  • 1 teaspoon salt
  • 5 cups water
  • 2 tablespoons Mazola corn oil
  • 2 tablespoons green coriander, chopped
  • ½ teaspoon extra salt
  • 500 grams molokhia, finely chopped
  • 1 lemon

Molokhia with chicken

Instructions:

Step 1: Place the chicken in a large saucepan over medium heat.
Step 2: Add the cardamom, onion, bay leaf, cinnamon stick, salt, and water. Bring the mixture to a boil.
Step 3: Skim off the foam layer from the broth using a spoon.
Step 4: Reduce the heat, cover the pot, and simmer for about an hour until the chicken is fully cooked.
Step 5: Strain the chicken broth into another saucepan. Add half a tablespoon of mashed garlic and bring it to a boil.
Step 6: Stir in the molokhia, reduce the heat, and simmer gently. Skim off any foam from the surface.
Step 7: Heat Mazola ghee in a frying pan and sauté the garlic and coriander.
Step 8: Add the sautéed garlic and coriander to the molokhia mixture, remove the pot from the heat, and stir well.
